There are many recipes that can be easily adapted for individuals with Crohn’s disease.
Some general guidelines to keep in mind when creating recipes for individuals with Crohn’s disease include:
- Avoiding high-fiber foods, as they can be difficult to digest and can worsen symptoms.
- Choosing low-fat and low-sugar options, as high-fat and high-sugar foods can be hard on the digestive system.
- Incorporating easily digestible protein sources, such as fish, chicken, and eggs.
- Avoiding foods that can cause gas and bloating, such as beans and cruciferous vegetables.
- Incorporating anti-inflammatory foods, such as turmeric, ginger, and omega-3-rich foods, like salmon, mackerel, and sardines.
Here are a few recipe ideas to get you started:
Baked salmon with a ginger and turmeric marinade:
- Mix together 1 tablespoon of olive oil, 1 tablespoon of grated ginger, 1 teaspoon of turmeric, 1 clove of minced garlic, and a pinch of salt.
- Place a salmon fillet in a baking dish and pour the marinade over it.
- Bake at 350 degrees for 15-20 minutes.
2. Creamy chicken and vegetable soup:
- Sauté 1 diced onion and 2 cloves of minced garlic in a large pot with 1 tablespoon of olive oil.
- Add 2 cups of chicken broth, 1 cup of diced cooked chicken, and 1 cup of diced vegetables (such as carrots, celery, and zucchini)
- Bring to a boil, then reduce heat and let simmer for 15 minutes.
- Stir in 1/4 cup of heavy cream and heat through.
3. Scrambled eggs with vegetables:
- Scramble 2 eggs in a pan with 1 tablespoon of olive oil.
- Add in 1/4 cup of diced vegetables (such as bell peppers, mushrooms, and spinach) and cook until the eggs are cooked through.
- Season with salt and pepper to taste.
4. Grilled chicken and vegetable skewers:
- Cut 1 pound of boneless, skinless chicken breast into bite-sized pieces.
- Cut a variety of vegetables, such as bell peppers, onions, and mushrooms, into bite-sized pieces.
- Thread the chicken and vegetables onto skewers (if using wooden skewers, soak them in water for 30 minutes before using)
- Brush with a marinade made of 2 tablespoons of olive oil, 2 cloves of minced garlic, 1 tablespoon of chopped herbs (such as basil or parsley) and a pinch of salt and pepper.
- Grill over medium-high heat until the chicken is cooked through and the vegetables are tender.
5. Slow-cooker turkey chili:
- Brown 1 pound of ground turkey in a skillet over medium heat.
- Add 1 diced onion, 2 cloves of minced garlic, and 1 diced bell pepper to the skillet and cook for a few minutes more.
- Transfer the turkey mixture to a slow cooker and add 1 can of diced tomatoes, 1 can of kidney beans (rinsed and drained), 1 cup of chicken broth, 1 teaspoon of chili powder, and 1/2 teaspoon of cumin.
- Cook on low for 6-8 hours or on high for 3-4 hours.
6. Creamy tomato and basil soup:
- Sauté 1 diced onion and 2 cloves of minced garlic in a large pot with 1 tablespoon of olive oil.
- Add 2 cups of chicken broth and 1 can of diced tomatoes.
- Bring to a boil, then reduce heat and let simmer for 15 minutes.
- Stir in 1/4 cup of heavy cream and a handful of chopped fresh basil.
- Use an immersion blender or a regular blender to puree the soup until smooth.
